1/4 c. red pepper
1 jalapeno pepper
1 green onion
2 tbsp. cilantro
Cut up mango, red pepper, jalapeno pepper, green onion and cilantro and place into blender. Add juice from 1 lime and 1/2 lemon. You can play around with the limes and lemon. I like more lime and cilantro in mine. If you want a very mild salsa, consider half a jalapeno instead of the full pepper.
Blend/pulse on low until desired consistency. (I often double the recipe so I have enough for guests or for the week.) Enjoy!
