Here’s a great recipe for these hot summer days!

Green Goddess Quinoa Salad

• 2 C. Quinoa, cooked
• 2 C. Cherry Tomatoes, halved
• 2 C. Spinach Leaves
• 1/2 C. (or more, to taste) Avocado Cilantro Dressing

For the Dressing:
• half an Avocado
• 1/4 C. Greek Yogurt
• 1/2 C. Water
• 1 C. Cilantro leaves
• 1 Garlic Clove
• 1/2 t. Salt
• squeeze of Lime Juice

Cook the quinoa and let cool for a few hours. Toss all ingredients together to combine!

Special add-ins:
Fresh mozzarella cheese (cut into bite sized pieces), a few handfuls of sliced almonds, grilled veggies, grilled chicken
